Mango Sticky Rice (photo & recipe :Val)

Ingredients: 1/2 Maha Chanok Mango  80g glutinous rice (soaked for 4-8hrs) 1 pandan leaf some toasted sesame seeds 15g sugar 1/2 tsp salt 65ml coconut milk Topping cream : 1/4 tsp corn flour 50ml coconut milk 1/3 thsp sugar 1/3 tsp salt

1.Lightly oil a pan and steam glutinous rice with pandan leaf for 15 mins 2.Heat sugar ,salt and coconut milk over low heat until all dissolved 3.When the glutinous rice is ready discard the pandan leaf, pour the coconut mixture over the rice,let the rice sit for a while 4.Place glutinous rice on plate with top with toasted sesame seeds Serve with fresh mango & topping cream

Seafood Fried Rice (photo & recipe: Fiona)

1.Sear scallops and prawns on high heat. Put them aside. 2.Stir fry garlic, shallots and chillies. 3.Throw in vegetables; inch cut long beans & diced carrots. 4.Add in cooked rice and mix in condiments such as fish sauce, oyster sauce & pepper to taste. 5.Add in the seared seafood into the fried rice and stir fry for a min. 6.Top up with a sunny side egg.Enjoy !

Ingredients :

1 bowl cooked rice 1 egg 1 thsp fish sauce 2 chilli padi (optional) a dash of pepper

Mango Ice Cream (photo :anonoymous)

6 ripe Maha Chanok Mangoes  3 cups heavy cream, chilled 1 can condensed milk, chilled 1 tsp vanilla extract Peel and cube the mango, then puree in a blender until smooth.

1.Transfer mango puree to a large mixing bowl and stir in condensed milk. 2.Beat the heavy cream with vanilla until stiff peak. 3.Add whipped cream to the mango mixture and fold until combined and smooth.  4.Add cube mangoes (optional) 5.Transfer the mixture to a freezer proof container, cover well, and freeze until soft serve consistency or overnight.

Dipping Fish Sauce with key limes

2 Tablesppon of Fish Sauce 2 cut chilli padi 1 tsp key lime juice some chopped coriander  Mix all together  Good for dipping your fish balls, prawns, fish slices & as a hotpot dipping sauce

Refreshing Lime Juice

1 cup freshly squeezed lime juice (about 5 medium to large limes) 7 to 8 cups water 1 cup white sugar (to taste) Optional garnish: fresh fruit (such as lime wedges or honeydew slices) Add a few ice cubes if desired.

Thai Steam Squid (Pla Muk Neung Manao)

7 small to medium squids 6 gloves garlic minced 200 ml key lime juice 4 tbsp fish sauce 2 sprigs coriander Wash and rinse Squid Wash and finely chop garlic, chilli and coriander While steaming squid, mix all ingredient in a bowl Pour sauce evenly onto the hot steaming squid and topped with coriander as garnish. Ready to serve.
